From The Marram Grass to Y Marram

The origin story of The Marram Grass is well-publicised, a venture started by Liam and Ellis Barrie, which over the years blossomed into a thriving restaurant known for its commitment to quality, community, and innovation.

Unfortunately, The Marram Grass closed its doors in 2021. Yet, through the experience gleaned from the impact of Covid-19, the subsequent challenges, including the closure of The Marram Grass and the impact on the wider hospitality industry, the approach has been reshaped. Thus, Y Marram emerges, focusing on the ethos and values set by The Marram Grass, and reinforcing the vision to create a hospitality hub that promotes development, performance, and rejuvenation.

Chef Experience - Y Marram 2024

It’s about more than just the customer experience; it’s about nurturing the individuals within our team and those we work with, exploring soft skills, teamwork, and resilience. Y Marram aims to create an environment where people can learn, grow, and thrive. With Liam and Ellis now part of the new team, serving as mentors and custodians of some of the foundational values, we look forward to reestablishing the space for many years to come.

A Passion for Produce at Y Marram, Inspired by The Marram Grass

A key pillar of The Marram Grass, solidifying its status and reputation as one of Anglesey’s favourite restaurants, was its embrace of local, seasonal produce. Y Marram now has the luxury of utilising an ever-growing and more varied bounty of produce from our locality, across North Wales and beyond, to incorporate into the menus and events. The groundwork laid by The Marram Grass means that Y Marram has an excellent selection of produce and a unique network of producers to work with and source from. Our chefs have the privilege of working with these exceptional ingredients to create dishes that highlight their natural flavours. Whether it’s a simple, hearty meal or something more intricate, each plate is crafted with attention to detail that reflects the hard work of our local producers.

People at the Core

In 2018, Liam and Ellis launched a Kickstarter campaign to establish a cookery school, aiming to create a dynamic training environment to help train the next generation of hospitality professionals and enhance operating standards and experience levels in the local hospitality industry. Y Marram’s commitment to people goes beyond our customers; it’s about creating a nurturing environment for our team as well. Hospitality is about people and connections, and we believe that a happy, motivated team is the key to providing an outstanding dining experience. The ethos of the cookery school has expanded beyond the original classroom. Team development, skills, and training continue to be a focus of what Y Marram offers, with workshops and initiatives on the horizon to support food education and literacy.
